Starlight - Decaf

This decaffeinated coffee comes from Jaltenango, Chiapas, Mexico, produced by La Tribu, a network of 65 women producers. The lot is called Vayichil, meaning "to dream" in the Mayan Tzotzil language. It features Peñazco and Bourbon varieties grown between 1650–1800 meters altitude and is cultivated organically. The coffee is decaffeinated using the Mountain Water Process in Veracruz, Mexico, which removes caffeine without chemicals while preserving natural flavor compounds. The cup profile offers orange brightness, almond and milk chocolate sweetness, with soft stone fruit notes. The coffee is smooth, full-bodied, and balanced.
