Somewhere - Black Honey, Costa Rica - Don Mariano

About This Coffee

This is a seasonal release from Costa Rican producer Don Mariano, processed using the black honey method. The coffee was initially created as an experiment to explore the effects of longer fermentation compared to Daydream, a yellow honey process coffee from the same producer. This year's release features a sweet jammy profile and is less funky than previous years' batches.

Yamabiko

This Toronto based Yamabiko Coffee Roasters takes its name from the Japanese word for "echo" or "mountain reverberation" and applies Japanese precision to every aspect of its specialty roasting. They use a Japanese Fuji Royal roaster for light profiles that emphasize clarity and delicate flavors, sourcing single origins from Ethiopia, Kenya, Colombia, Guatemala, Panama, and even Japan through specialty importers. The operation is primarily wholesale focused, supplying select Toronto specialty cafes, with limited production that prioritizes quality over volume. Intimate cuppings and Japanese style coffee ceremonies replace the typical roastery events, reflecting a philosophy where reverence and attention to detail define the craft. A carefully curated subscription delivers monthly selections to those who appreciate the quieter, more contemplative side of specialty coffee.
