This single origin coffee from El Salvador is sourced from Finca San Andres, a small specialty coffee farm in the Chalatenango region owned by Francisco Recinos and managed by his son, Jose Recinos. Grown at 1800 meters altitude in the Alotepec-Metapán mountain range, this Pacamara variety is naturally processed with fully ripe cherries hand-harvested, fermented in sacks for 11-17 hours, then de-pulped and washed before being slowly dried on raised beds for 10-16 days. The coffee features tasting notes of Pinot Noir, cherry, plum, and hazelnut. Roasted as an espresso profile with a recommended recipe of 20g in/44g out extracted in 27-30 seconds.
