Founded by Marwin Shaw, a longtime Melbourne coffee expert, Disciple operates from the backstreets of Brunswick as a small roastery with a cellar door tasting room concept. Each bean comes with a detailed story about its growers, flavor profile, and processing method, with a particular focus on experimental techniques like fruit and yeast fermentation during drying. Shaw's philosophy is that coffee farmers and producers are the real heroes, and the roastery's job is simply to showcase their work through gentle, precise roasting on high end equipment.
