This decaffeinated coffee is from Colombia's Popayan region at 1800 meters altitude. It features mixed varieties and is processed using the sugarcane decaffeination method. The coffee comes from a group of farms in the region, where growers sell the coffee as parchment before milling in Popayan, then it travels to Caldas for decaffeination at DESFAECOL. The decaffeination process uses spring water and natural Ethyl Acetate derived from local sugar cane. The flavor profile includes caramel and tropical fruit notes.
