About This Coffee

Pop Candy is a Colombian coffee from Palermo, Huila, produced by Juan David Chinchilla at Finca La Cumbre, grown at 1700–2000 meters altitude. It features the rare Papayo variety, known for its elongated cherries and expressive fruit character. Processed using an anaerobic natural method with 80 hours of extended fermentation in cherry, followed by slow drying in covered sheds over approximately 20 days. The cup is flavor-forward with high sweetness, juicy and elastic acidity, and tasting notes of blueberry candy, passion fruit, and plum.
