This regional blend represents the broader character of Matagalpa, Nicaragua, bringing together coffees from multiple small producers across northern Nicaragua. The coffee features Marsellesa and Catimor varietals grown at elevations between 900-1100 meters in the Jalapa region. It is washed processed, shaped by mountainous terrain, cooler nights, and a distinct dry season that supports steady cherry maturation and consistent post-harvest drying. The coffee offers dark chocolate and grapefruit tasting notes with tarty sweetness and medium body, known for balance and structure rather than extremes.
