This coffee is from Finca La Riviera in Santa Rosa de Cabal, Risaralda, Colombia, produced by Julio Madrid and Julio Andrés Quiceno at 1,750 MASL. The variety is Sudán Rumé and it undergoes a 44‑hour anaerobic bioprocess (including a 24‑hour whole cherry fermentation, depulping and ~36‑hour controlled bioreactor fermentation inoculated with Kazachstania humilis, then washed and dried). Cupping notes: Blueberry, Apricot, Peach, Citrus, Licorice, Rose, and Maple Syrup with a silky body and elegant sweetness.
