This Gesha from La Palma Y El Tucán in Cundinamarca, Colombia (La Palma farm, 1710–1770 masl) underwent a Bioinnovation lactic fermentation—107 hours anaerobic in buried clay pots, 36 hours aerobic—then rinsed and dried for 31 days. Expect delicate floral aromatics, complex citrus, white peach, vanilla sweetness, vibrant acidity, and a velvety texture.
