This coffee comes from the Bookkisa hamlet in the Guji highlands region of southern Ethiopia, produced by 33 farmers with garden plantations rarely exceeding 2.5 hectares. Grown at 2175 meters altitude, the coffee is hand-picked at full maturity between November and February. It undergoes natural processing, being dried on raised beds for 21 to 28 days with the cherries turned 6 times daily before mechanical pulping. The coffee consists of varieties 74110 (Gibirinna) and 74112 (Serto), selected by JARC in 1979 for disease resistance and high sensory potential. Processed at the Dambi Uddo washing station operated by Ture Waji and Sookoo Coffee. The coffee features mango and pineapple notes with a blueberry jam finish, described as very sweet and round.

Café Pista
What began in 2014 as Le Pista Cafe Mobile, a bicycle powered coffee cart created by Maxime Richard, has grown into a Montreal roastery with three brick and mortar locations.
