This coffee is from Finca La Soledad in Acatenango, Chimaltenango, Guatemala, produced by the Perez family. The Red Bourbon varietal is grown at 1400-1600 meters altitude and processed using the washed method. The coffee offers flavor notes of green apple, cacao, and caramel. As espresso, it features a sweet texture with Scottish caramel qualities. As filter coffee, it presents a juicy, vibrant cup with apple character and a lingering cocoa finish, balanced by a touch of acidity. The farm covers 90 hectares with half dedicated to coffee production and the rest preserved as natural forest. The Perez family are sixth-generation coffee producers who refine their processing methods with exceptional attention to detail.
