A natural-processed lot from the Gaitania, Santiago Pérez, and Planadas communities in Tolima, Colombia, grown at 1,600–2,100 m asl. Processed at La Roca Estate and Tres Rayas' drying stations via anaerobic natural method, with meticulous hand-sorting, flotation, and three weeks of slow drying on raised beds. Cultivated by ASOPEP cooperative under award-winning producer Jorge Elías Rojas. Varieties include Caturra, Castillo, and Bourbon. Tasting notes of red wine, ripe cherry, and orange jam. Suitable for both espresso and filter.
