About This Coffee

This coffee is from the Corazón de Jesús Micromill located in Brunca, Costa Rica's youngest coffee-growing region, owned by the Alvarado Fonseca family. The coffee comes from the Chirripó microregion, specifically from Los Toños. The Alvarado Fonseca family has established themselves as producers of high-quality coffees, with fifth and third place awards at the Costa Rica Cup of Excellence 2021 and 2022. This coffee underwent a double anaerobic processing at the Corazón de Jesús micromill. Freshly harvested coffee cherries were fermented for 12 hours in sealed barrels, then dried on raised beds to reduce moisture before being fermented a second time for 48 hours. After the second fermentation, the cherries were dried for four days on raised beds and then approximately 45 days on drying terraces.
