About This Coffee

This is a Costa Rica Las Lajas Black Diamond Nanolot from the Carizal region, featuring the SL28 variety. The coffee is produced by Oscar and Francisca Chacón, who supervise harvest and processing with great care. Cherries are harvested when Brix values reach approximately 22° to ensure optimal ripeness. The microlot undergoes a unique Black Diamond process: cherries are hand-checked for defects, washed under fresh spring water, sun-dried for 7 days, then fermented for 30 days on temperature-controlled, shaded beds. When beans reach 11% water content, a proprietary heating and cooling procedure completes the process. This labor-intensive method creates unique aromas with depth, sweetness, and complex acidity.
