About This Coffee

This coffee is produced by Wilton Benitez at Finca Granja Paraiso 92 in Piendamó, Cauca, Colombia, at altitudes between 1550-1800 meters. The coffee consists entirely of the Colombia variety of Arabica. It undergoes a three-stage experimental process: natural processing, followed by anaerobic washed fermentation with added yeast, and thermal shock treatment. The detailed method involves sanitizing cherries with ozone, 48-hour whole cherry water submersion, pulping, 24-hour Lactobacillus fermentation, thermal shock using hot and cold rinses, and rapid drying with an Eco-Enigma dehumidifying dryer. Flavor notes include dark chocolate nibs, grapes, and juicy bright acidity. Wilton Benitez won the Golden Bean in 2022 and best cup of Cauca in 2023 and 2024.
