This Colombian coffee is from the Fincas 575 farm in Northern Tolima, in the municipality of Palocabildo, grown at 1,350 meters altitude. The coffee features the CR-95 variety and is processed using LaREB's "natural-de-siempre" method, a modern interpretation of traditional natural processing. Selectively picked overripe cherries undergo a 72-hour in-husk resting phase in enclosed containers creating controlled anoxic fermentation, followed by 45 days of greenhouse drying and a two-week stabilization phase. The cup profile features stracciatella ice cream, strawberry, and wild berries with soft acidity and a creamy, coating mouthfeel. Sourced through La Real Expedición Botánica (LaREB), an independent supplier operating directly from farm level in Colombia. Harvested in May 2025.
