Seth Taylor Coffee

About This Coffee

This coffee is from Finca El Uberrimo in Colombia, grown at 2150 meters altitude in the Arboleda region of Nariño. The varieties are Pink Bourbon and Gesha, processed using anaerobic natural method. Cherries are left in bags for 70 hours, followed by flotation and tank oxidation, then a second fermentation lasting 2-3 days without water until reaching 10° Brix. Drying starts on patios for 6 days, then on raised beds for 20-25 days until 14% moisture, followed by sun-refining under a tent until 10-11% moisture is achieved. The coffee displays flavors of red grape, raspberry, and hibiscus with rich sweetness and deep red characteristics.

Seth Taylor Coffee

Seth Taylor put his own name on this Montreal micro roastery, establishing a personal, hands on approach that extends from direct relationships with producers to origin travel and intimate cuppings. Starting as a pop up before settling in Mile End, the operation remains deliberately small, with limited production runs that prioritize quality over volume. Roasting is done in small batches with light to medium profiles showcasing origins from Ethiopia, Colombia, Guatemala, Kenya, and El Salvador. The roastery primarily operates as a production facility rather than a bustling cafe, supplying select Montreal specialty cafes through a focused wholesale program. A subscription service with personalized selections reflects Seth's belief that coffee is best when it carries the personal touch of someone who genuinely cares about every step.
