This single-origin coffee is from the El Vergel Estate in Tolima, Colombia, grown at 1460 meters elevation. The coffee is Gesha variety processed using the Koji Supernatural method, where koji spores (aspergillus oryzae) are sprinkled over coffee cherries and left for 3-4 days with controlled temperature and oxygen presence, followed by 10 days of sun drying and 2-4 days of mechanical drying. This processing method acts as a catalyst to breakdown the inherent properties of the coffee cherry and amplifies flavors, resulting in increased sweetness and cup structure. The coffee offers floral, white grape, vanilla, apricot, and mixed spice notes. Available as filter roast only.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch. Award winners at the 2019 Roasters Smackdown and 2023 ASCA competitions, they offer their signature Outsider Blend alongside rotating single origins and an automated pour over experience at the bar.
