Single origin coffee from Yuan Yi Yuan Estate in Mangshi, Yunnan province, China. Produced by Yihong Duan at an elevation of 1500 meters above sea level. The coffee is a Catimor varietal processed using anaerobic natural methods with enzymatic yeast fermentation. The process involves picking at peak ripeness, floating, enzymatic soaking, semi-pulping, and two-stage fermentation—first with oxygen at controlled temperature, then without oxygen. Beans are dried at low temperature before hulling. Filter roast with tasting notes of rose, lychee, and peach iced tea.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022.
