Manta Ray Coffee RoastersAbout This Coffee
This coffee comes from the Jura Manor Estate in Mangshi, Dehong prefecture, China. The Little Gardenia farm is approximately 26 hectares, owned and operated by Mr. Tang at an elevation of 1600 meters above sea level. Introduced in 2019, this Ethiopian Heirloom varietal showcases the pure expression of Dehong terroir. The coffee undergoes traditional washed processing where only the ripest cherries are selected, depulped, and soaked for 48 hours to breakdown mucilage. After washing, cherries are placed on sun-drying beds before moving to shade beds to dry over 15 days. Mr. Tang produces approximately 200kg of this coffee annually. Cup profile features green tea, white nectarine, nashi pear, and floral notes.
