This coffee is from the Vinhal Farm in the Cerrado Mineiro region of Minas Gerais, Brazil, at 980 meters altitude. The farm has been producing high quality coffee since 1988 and is run by Rafael Vinhal. This is a Red Catuai variety, which is a cross of Mundo Novo and Caturra. The coffee undergoes anaerobic washed processing with double fermentation before being washed. The resulting cup profile features coconut, prune, and roasted almond flavors. The farm is known for its innovative processing methods and is a member of the Brazil Specialty Coffee Association.

After more than eight years of preparation, Manta Ray Coffee Roasters opened their flagship roastery in Nunawading, Melbourne, in October 2022. The industrial chic space features a visible roasting area framed by large windows, inviting visitors into the process. Drawing on a background in film color grading, the team approaches roasting as a form of creative expression, seeking to reveal depth and character in every batch.
