This Colombian coffee is from producer Wilton Benitez at Granja Paraíso 92 farm in Piendamó, Cauca region at 1800 meters altitude. The SL28 variety undergoes a 92-hour anaerobic fermentation followed by Thermo Shock Washed processing, a technique using alternating warm and cold water to stabilize microbial behavior and lock in volatile aromatic compounds. The coffee features tasting notes of raspberry lollies, ribena, and sakura jelly with bright fruit-forward structure, layered clarity and depth, floral elegance, and jelly-like sweetness.
