About This Coffee

This is a Geisha variety coffee from the HLE-El Velo farm in Boquete, Panama, produced by The Petersons at 1763+ meters altitude. The coffee is from the Higo 7B Oragnico microlot block. El Velo is a 50-hectare farm purchased in 2012, planted from 1650-1900 meters altitude with Geisha and Catuai varieties, as well as exotic varieties like Laurina, Pacamara and SL-34. The farm features a more uniform planting pattern in rows due to its flat landscape and is adjacent to a nature reserve extending to 2900 meters. The coffee was picked in April 2025 and arrived in November 2025. It is processed using the washed method.

Founded in 2020 by Tong Zhang in Chengdu, this micro-specialty roastery emerged from an unexpected journey—a robotics engineer's transformation into coffee artisan after discovering specialty coffee in Paris. Zhang, who placed third in the French Brewers Cup in his first year as a barista, brings technical precision to every roast, using Stronghold S7Pro machines to highlight the unique terroir of each coffee through light profiles that express origin, climate, soil, and the people behind each bean.
