A Pink Bourbon coffee from Jose & Francy Martinez at El Casino farm in Palestina, Huila, Colombia (1700m). The lot is double-fermented then washed and dried on shaded raised beds; green coffee is frozen for storage. Tasting notes highlight guava, peach and pink grapefruit. This omniroast is optimized for filter brewing but can be pulled as espresso by a skilled barista.
