Dan Belliveau founded Hale Coffee in 2012 in Halifax, Nova Scotia, with the shortened name paying homage to the city itself and its Maritime coffee culture. The roastery and training lab on Gottingen Street serves as the heart of the operation, where a Probat handles both sample and production roasting in service of lighter profiles that let origin characteristics come through. Sourcing prioritizes direct trade and long term producer relationships, drawing from Ethiopia, Kenya, Colombia, Guatemala, Costa Rica, and El Salvador. As one of Atlantic Canada's leading specialty roasters, Hale runs SCA certified courses in barista skills, brewing, and sensory analysis, alongside regular public cuppings and education workshops. Seasonal releases highlight unique processing methods and rare varieties, reflecting a philosophy that positions coffee as a catalyst for community and connection in Halifax.
