This Pacamara coffee comes from Hacienda Barbara in the volcanic highlands of Boquete, Panama, at elevations ranging from 1,200 to 2,100 meters above sea level. The farm is managed by Hunter Tedman and Linda Arauz, emphasizing sustainable practices and meticulous cultivation. The cherries are carefully harvested at peak ripeness and slowly dried to develop intense fruit character and layered sweetness. The farm's fertile volcanic soils and optimal weather conditions provide ideal terroir. Processing includes innovative yeast fermentation techniques developed at the Beneficio Bajareque processing plant. This coffee offers a full body with gentle acidity, featuring notes of black plum, chocolate truffle, dates, and brandy-like warmth.
