This single origin coffee comes from Finca Filadelfia, located in Antigua, Guatemala, a valley between three active volcanoes that enrich the soil with volcanic matter. The farm has been cultivated by the Dalton Family since 1864, when Manuel Matheu planted the first crops. The coffee is processed using the washed method: ripe cherries are picked when they reach the desired sugar percentage, then floated, sorted, pulped, and fermented for 24-36 hours in concrete tanks. The coffee is demucilaged and fermented once more in water for another 24 hours, washed in channels, then dried for 3 days on patios before being transferred to guardiolas (mechanical dryers) for an additional 3 days at low temperature.
