This coffee is from Guatemala's Fraijanes Plateau at Finca El Jardín, farmed by Pablo del Cid. It uses the Mosto Anaerobic Natural process: fermented for four days in sealed tanks with its own must, then dried in a greenhouse over 30 days. The cup shows complexity with a distinctive body from volcanic soils and flavor notes of strawberry, stone fruits, and cream.
