MOK Specialty Coffee

About This Coffee

This decaffeinated blend from Guatemala consists of strictly hard beans (SHB) grown above 1200 meters altitude. The blend is approximately 80% washed varietals including Bourbon, Caturra, and Catuaí, complemented with natural and honey processed Geisha and Caturra. The caffeine is removed using ethyl acetate derived from sugar cane, then the beans are dried on patios to reach 11% humidity. The blend honors women in the coffee supply chain and is sourced through Coffee Bird from various Guatemalan producers.

MOK Specialty Coffee

Founded in 2012 by Jens Crabbe, MOK began as a small roastery and bar in Leuven before expanding to Brussels. Jens, a two time former Belgian Cup Tasters Champion, is driven by a desire to explore the full potential of coffee flavor. MOK's philosophy is centered on an omni roast approach, where they develop one ideal roast profile for each coffee that works for both filter and espresso. This method aims to showcase the coffee's inherent sweetness and terroir with maximum clarity and minimal roast influence.
