About This Coffee

This natural anaerobic processed coffee is from Colombia's Tolima region, specifically from the communities of Gaitania, Santiago Pérez, and Planadas. Produced by Jorge Elías Rojas and processed at La Roca Estate and Tres Rayas station, the coffee is grown between 1,600 and 2,100 meters altitude. The lot features Caturra, Castillo, and Bourbon varieties. The cherries undergo meticulous hand-sorting, flotation to remove defects, then three weeks of slow drying on raised beds. This coffee has an SCA score of 88 and offers flavors of red wine reminiscent of Beaujolais, followed by ripe cherry and orange jam, with a round body and low to medium acidity.
