About This Coffee

This seasonal espresso blend offers a full body with a sweet finish. It features bright, complex yet classic notes from the first sip, with rich cacao and caramel notes throughout. The coffee works well as a straight espresso and provides a solid foundation for milk-based drinks. This espresso is a blend of green coffee from Brazil and Guatemala. The Brazilian coffee comes from Fazenda Boa Esperanca in the Alta Mogiana region, a farm established in 1945 in the municipality of Ibiraci. The farm produces on 135 hectares, mostly Catuai variety, along with Acaia, New World, and some Bourbon. The Guatemalan coffee comes from Finca Bendicion, located at the base of the Acatenango and Fuego volcanoes in San Pedro Yepocapa. This 30-hectare farm dedicates 29 hectares to coffee production.

Tucked along Rue Saint Jean in Quebec City, Cantook Micro Torrefaction carries a name inspired by the lumberjack's tool known as a "can't hook," a nod to the collaboration between French and English settlers that shaped Canada's identity. The family behind Cantook has been in coffee since 1982, with the current business on Saint Jean Street operating since 1998 under co ownership since 2005. They roast on a Diedrich IR 12, with the process fully visible to guests who come for expertly prepared pour overs, espresso drinks, and the cafe's beloved matcha cookies. Direct trade relationships, including origin trips to Costa Rica, ensure that quality and transparency guide every roast.
