Decaf Mexico Esmeralda

Decaf Mexico Esmeralda

Lark Coffee Roasters

About This Coffee

This coffee is from Mexico, specifically the Esmeralda region. It is decaffeinated using the Ethyl Acetate (EA) natural process, also known as the sugar cane process. The green beans are steamed or soaked to expand them, then soaked in EA, a naturally occurring organic compound found in fruits and vegetables. The caffeine bonds with the compound and is extracted from the bean. The decaffeinated coffee is then rinsed, re-dried and re-bagged. The flavor profile includes orange, malt, chocolate, creamy, and clean notes. The coffee is imported by Royal Coffee.

Lark Coffee Roasters

Lark Coffee Roasters is based in Creston, a small town in the Kootenays region of British Columbia, founded by Ilana Cameron. Named after the lark bird and its association with morning rituals and awakening, the roastery works with a Diedrich in small batches to produce approachable medium profiles that balance origin character with sweetness. Beans come from Colombia, Guatemala, Ethiopia, Kenya, Brazil, and Costa Rica, sourced through long term relationships with green coffee suppliers. Lark's commitment to sustainability and quality runs through the operation, and a subscription service keeps home brewers stocked on a flexible schedule.
