Ace Coffee RoastersAbout This Coffee
This Colombian coffee features Caturra variety cherries processed using the Ceiba Honey method. The processing begins with a 36-hour anaerobic pre-fermentation in GrainPro bags, followed by 120-hour fermentation in hermetic tanks under shade at 22-25% humidity. Mechanical drying occurs over 72 hours, and the coffee is stabilized for 30 days in GrainPro bags. The flavor profile blends caramel notes with vibrant citrus and raspberry undertones, creating a complex, fruity cup with rich depth and clean finish.
