Colombia Los Nogales is a low-caffeine Typica from the Hernandez family in Huila (Pitalito) grown at 1,750–1,950 MASL. The coffee is pulped and decaffeinated using a solvent derived from coffee pulp (removing ~95% caffeine), then subjected to a 96-hour sourdough fermentation and an 8-day controlled drying phase. The roast is light, producing a clean, expressive cup with distinct fruit-driven characteristics, including notes of bubble gum, banana, and candied apple.
