This coffee comes from La Marquesa farm in San Jeronimo, Antioquia, Colombia, produced by Reinaldo Zapata. The Castillo variety is cultivated at 1650 meters above sea level. The coffee undergoes a washed process with double fermentation, where cherries are pulped and fermented in two distinct stages with close monitoring of time, temperature, and microbial activity.
