This coffee comes from Finca La Salsa in Honduras, a farm operated by third-generation producer Benjamin Paz. The farm cultivates varietals not typically grown in Honduras, including SL-28, Gesha, Orange Bourbon, and Ethiopian heirlooms. Located in the misty highlands, the farm benefits from cooler temperatures that slow maturation, fermentation, and drying processes. Paz uses refrigerated fermentation containers to prolong sugar development and enhance acidity. The farm prioritizes sustainable farming practices, and Paz has placed at the top of the Cup of Excellence rankings in 2022 and 2024. The result is a clean cup with delicious intensity and dark fruit characteristics.
