Tres De Mayo is a washed coffee from the Tres De Mayo farm in San Ignacio, Cajamarca, Peru, produced by Candelaria Sarango Santos. The lot is a blend of Typica and Caturra varieties; cherries were hand-harvested, pulped, briefly fermented in open containers, fully washed, then dried on raised African beds for 15–20 days. Tasting notes include green apple and cherry. Available in both filter and espresso roast preparations.
