A coffee from Flores Island, Indonesia, sourced from farms near the Wawo Muda volcano in the Wolo Bobo region at 1,500+ meters above sea level. The hybrid anaerobic-honey process begins with whole cherries sealed in barrels for three days for anaerobic fermentation, then depulped and dried with the fruit mucilage intact. Varieties include Typica and Jember (S795, a natural mutation of Typica and Liberica). Flavor notes include burned sugar, cooked fruit, mace, saffron, tobacco, canned pear, and dry white wine, with a syrupy body and subtle acidity.
