This coffee comes from Hacienda La Papaya in Ecuador, owned by Juan Peña, one of Ecuador's most recognized specialty coffee producers. The variety is Typica Mejorado, processed using an anaerobic washed method: fresh cherries are pulped and placed in a polyethylene tank where they ferment with liquids from previous fermentations of up to 100 hours, at temperatures not exceeding 24°C. The coffee is then dried in controlled temperature and humidity rooms for 30 days.
