A natural anaerobic coffee from Finca La Carmelita in Calarcá, Quindío, Colombia, produced by Luis Miguel Hoyos. The Castillo variety is grown at 1,320 meters above sea level and processed through controlled anaerobic fermentation at Villa Gloria, Luis Miguel's own processing facility. The lot, known as Carnaval, delivers a wild and sweet flavor profile with notes of maraschino cherries, red candy (Red Gushers), and a creamy strawberry smoothie finish.
