A 2023 crop Sidra variety natural processed coffee from Potosí Farm by Café Granja La Esperanza, located in Valle del Cauca, Caicedonia, Colombia at 1,400–1,860 masl. Cherries undergo a 48-hour anaerobic barrel fermentation with temperature controlled every 6 hours below 30°C, followed by 48 hours in a mechanical dryer and 8 days on solar drying patios. This process results in a cup with intense, concentrated notes from higher sugar concentration. The 2023 World Brewers Cup was won using this same natural Sidra from Potosí Farm.
