This coffee is an Aji Bourbon variety from the Zarza Bella Vista farm in the Bruselas region of Huila, Colombia, grown at 1540 meters altitude. It undergoes a complex thermal shock washed process, involving oxidation, anaerobic fermentation, and a thermal shock of hot-then-cold water. The flavor profile is vibrant and fruit-forward, featuring notes of guava, mango lassi, fruit roll up, and hibiscus. This light roast coffee offers a velvety body with a refined, balanced character.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
