This Sidra variety coffee is produced by Pepe Jijon at Finca Soledad in the Imbabura region of Ecuador at 1515 meters altitude. The coffee undergoes a unique Wave Natural CF process, involving a 72-hour submerged fermentation in grainpro bags followed by 28 days of cold dehydration. This light roast coffee offers a complex flavor profile featuring notes of peach soda, strawberry yogurt, pineapple, and hibiscus. It is characterized by a bright, sparkling acidity and a creamy texture.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta.
