The process involves alternating hot and cold water immersion, followed by 120 hours of fermentation with coffee cherry juice and a pre-ferment, then sun-dried for 15 days. The coffee features vibrant notes of pomegranate juice, cassis, cherry jam, and lemon thyme. Roasted as an omni profile suitable for both filter and espresso brewing.
