This coffee is from the Matagalpa region of Nicaragua, produced by several small producers in the Matagalpa and Jinotega regions working with Gold Mountain Coffee Growers. The coffee is natural processed and grown at elevations between 1,300 and 1,600 meters above sea level. The varieties include Catuai, Caturra, Bourbon, Pache Colis, and small amounts of Geisha. Gold Mountain Coffee Growers uses ripeness teams on every farm during picking to ensure quality. The flavor profile features pineapple, mango, and cherry notes.
Brothers Nathan and Gabriel Quillo founded Quills Coffee in 2007 in Louisville, Kentucky, driven by a vision for specialty coffee rooted in craft and community.
