A coffee from Chiapas, Mexico, specifically from the Aldama region at 1,455 meters altitude. Produced by 120 smallholder farmers under the Beneficio Comunitario San Pedro cooperative, established in 2018. Varieties include Typica, Bourbon, and Caturra, grown using mostly organic or low-intervention practices. Honey processed with 25 hours of fermentation before pulping in hermetic bags, then sun-dried on raised beds for 12 days. Flavor notes include bright citrus, honey, mandarin, red apple, apricot, chocolate, and juicy character.
