This single origin coffee is from El Salvador, produced by Diego Baraona, a 5th generation coffee producer at Los Pirineos farm in the Usulután region at 1400 meters elevation. The coffee is SL-28 variety processed using the Black Honey method. The lot is also called "Elite," honoring the 90-year-old Bourbon trees on Diego's farm. The processing involved picking and sorting cherries before drying on raised beds. This results in a lively coffee with notes of forest fruits and high quality dark chocolate.
