This coffee is produced by Finca La Inmaculada in the Cangonama and Yambila regions of Loja, Ecuador, at an altitude of 1,900 meters. The Criollo variety, derived from Typica, is grown by José Gabriel Chamba. The coffee is processed using a washed method, involving a 48-hour controlled fermentation followed by shade drying to preserve clarity and aromatic compounds. This lot is characterized by its density and structural clarity, resulting from the high-altitude, slow maturation of the cherries.
