High Tide is a naturally processed coffee from Finca La Joya in Nariño, Colombia, located at 2,000 meters altitude. The coffee is a mixed varietal blend of Caturra, Castillo, and Colombia varieties. The natural process involves selective harvesting of ripe cherries, flotation and manual sorting, followed by anaerobic fermentation for five days with starter culture. Beans are then dried on raised beds for 10 days plus 2 days in a mechanical dryer. Tasting notes include piña colada, grapefruit, and hibiscus.
