This coffee is a Sidra variety from Hacienda Santa Gertrudis in Ecuador. It is processed using a natural method, involving a 48-hour fermentation in a sealed tank followed by 25 days of drying on shaded raised beds. The cup profile features elegant winey notes that complement the botanical and tropical characteristics inherent to the Sidra variety. This coffee is roasted for filter brewing.
